This is the ginger bread village that Executive Chef Ralf Bauer, Executive Sous Chef John Hightower, and Pantry Chef Amie Tungpalan created at the Princess Kaiulani Hotel in Waikiki. They spent over 600 hours in the design and construction of the village, it stands over 14 feet high and 20 feet wide. Construction of the village required over 200 gallons of icing, 100 pounds of dark chocolate, 30 pounds of white chocolate and 60 sheets of gingerbread.
While the theme is modeled after a German village, Chef Bauer retained a Hawaiian touch by including Iolani Palace, Kawaiha'o Mission Church and the historical Moana Surfrider Hotel and Spa into the scene.
